Chocolate Hazelnut Linzer Cookies

A few weeks ago I made these chocolate hazelnut linzer cookies from Smitten Kitchen, which I’d been wanting to try for a while, and they were delicious. The cookies themselves have a lovely texture and flavor from the crushed hazelnuts, then the middle is filled with Nutella…and really, when is anything filled with Nutella ever bad? They’re a bit labor intensive but totally worth it if you’re looking for a fun baking project. Also, I burned a few of them but the recipe made a lot of cookies, so it wasn’t a big issue. The rings with the middles cut out bake up quickly, so be sure to watch them carefully if you decide to make these! Read on for a few more pics:

These are very decadent so I would definitely plan on eating a few and giving a few away to friends or family…they’ll be delighted and you won’t make yourself sick from cookie overload (not that I have any experience with that…:)

Yum, this recipe would work really well with almond flour to make them Paleo! Weekend project! You'll have to tell me where you got the cute cookie cutters too!
